What a name eh? These little rounds of goodness aren't quite flapjacks and aren't quite cakes. Gooey, tangy and tasty.
Ive mentioned in my muffin recipes how amazing silicone muffins moulds are and they really are vital for this recipe, as the cakes just pop out cleanly.
3tbsp smooth peanut butter
25g butter or other spread
100g finely grated pear (aprox two small pears). Be sure to keep any juice from the grating.
2 bananas, mushed up
75ml water (or apple juice for a sweeter taste)
250g porridge oats
200g frozen berries, defrosted and roughly maxed with a fork
Pregeat the oven to 160 degrees.
Melt the peanut butter, butter and honey in a pan over a low heat.
Stir in the bananas and pears and water.
Stir the mixture into a large bowl along with the oats.
Spoon half the mixture into the muffin mould, flattening and smoothing with the back of your spoon. Add a teaspoon of the berry mixture on top. Spoon on the rest of the mixture into each muffin mould, smooth it out and flatten.
Pop in the oven for 30 mins or until golden brown. Remove from oven and leave to cool in the muffin mould.
Eat right away or freeze.
